Can anyone else believe we’re practically to the holiday season? In a few short weeks, our lives will be filled with lots of eating, holiday parties, events, shopping, time with loved ones, etc. It’s the best time of year and my favorite time!
We have friends over a lot this time of year so I’ve become a master in easy appetizers that are so simple but extremely delicious. Everyone loves a sausage biscuit or cream cheese crescent rolls. A while ago I was making cheese biscuit bites and had the idea of adding pork sausage and cheddar cheese to cheese crescents. It didn’t turn out the way I wanted it to but after trial and error and some experimenting came up with this recipe.
Sausage Cream Cheese Bites
Ingredients
- 1/2 a pound of Odom’s Tennessee Pride Sausage (Mild 1lb Sausage)
I use Odom’s Tennessee Pride Sausage because it’s high-quality, fresh pork. It’s also made with Odom’s family secret spice blend recipe. It creates a delicious real country flavor that is sure to be a crowd-pleaser! It can be used in many different ways from breakfast to lunch to appetizers! You can find it at your local Walmart.
- 1/2 cup of cream cheese softened
- 1 egg
- 1 sheet of puff pastry (you can use Pillsbury biscuits but puff pastry holds the mixture better)


Directions
- Head to Walmart to get all of your ingredients.
- Preheat oven to 375° F
- Remove 1 sheet of puff pastry from the freezer and let it thaw. You want it to be able to fold without breaking.
- Cook the 1/2 pound of Odom’s Tennessee Pride Sausage on the stove until browned.
- Once the sausage is cooked, mix the cooked sausage in with softened cream cheese.
- After the puff pastry has thawed, cut into post-it size squares. Then place in a muffin pan or muffin tin. Don’t use mini muffin tins!
- But 1 egg in a small bowl and beat with a fork until runny.
- Once the egg is runny brush it onto puff pastry. If you don’t have a brush, I used the fork and it worked fine.
- Spoon the cream cheese mixture onto the puff pastry. Scoop sausage mixture generously!
- Put in the oven and let it bake for 15 minutes or until the pastry is golden brown.
- Put on a platter or plate and enjoy!
Prep time is 15 minutes, and cook time is 15 minutes, so it’s a quick and easy recipe! My husband loves these and asks for them regularly.

If it’s a cast iron skillet, it’s better to cook everything over moderate heat. Cooking on a heat higher than medium is actually likely to cause your food to burn or stick because of the cast iron’s conductive properties

Do you have to use egg?

I’ve actually not used an egg before and don’t tell a huge difference. It just helps the puff pastry cook a little better.
Do you drain the sausage?
I don’t. I’m sure it wouldn’t hurt if you did but it mixes well with the cream cheese.
Is that a mini cupcake pan or regular size?
Regular size!
You call for 1# of sausage but just use half of it, you said it makes 12 . why not go ahead and double it if your having a good sized party.? I am sure if there are any left you can put them in a sealable bowl and micro wave the next day. I am one of these people who does not believe in westeing food.
What is the yellow in the photo? cheese or the brushed on egg?

You definitely could! I saved the other half for sausage and biscuits the next day.
It’s the brushed on egg! Plus I let it cook to a golden brown.
This are great, been making them for awhile, all my family and friends love them. I freeze leftovers, thaw and warm in little oven, just as good as the day you made them..
I’m definitely going to freeze some of the next batch!

These sound really good, but just for clarification, there is more than one size of Post-it, so an actual measurement would have been great, and the size of the muffin tin used.
3 x 3 post it. And the size of the muffin tin, I have no idea. It’s just a basic muffin tin that holds 12.
If I made these ahead, can I freeze them. If so, must I bake them first?
Others have said that they make them and freeze them ahead and they’re just as good!

You can if you want, I didn’t!

I’m a bit confused about the cream cheese measurement. Do you mean a 1/2 cup by volume, or half of an 8 oz. brick of cream cheese?
You could brush the pastry with a little milk if you don’t want to use egg. The mini-tins make the perfect size bite, too!
I wonder if you could use wontons? I make crab rangoons in a mini muffin pan.
This sounds amazing. I always use the same sausage. It has the perfect flavoring and My grandkids like hot in sausage balls. Think I’ll do half and half and add some red pepper flakes in theirs.

I make something similar but I use wonton wrappers and I add a package of dry ranch dressing mix . Going to try the puff pastry though to see how we like it
I add diced red and green pepper for Christmas decor.
