Another Friday, another recipe! I don’t know why but I don’t like cooking main meals, just fun appetizers! Today I’m bringing you a fun and easy bruschetta recipe with mozzarella. This is perfect for front porch appetizers or if you have friends over (once the stay at home is lifted) or need to bring something to a party. Prep time is 20 minutes and it’s foolproof!
Easy Bruschetta Recipe with Mozzarella
INGREDIENTS
- 1/2 French Baguette
- 2 Medium Size Tomatoes
- 1 Medium White Onion
- 5 Basil Leaves (or Basil Leaf Flakes)
- 3/4 Tablespoons Olive Oil
- Salt and Pepper to Taste
- 1/4 Teaspoon Garlic Salt
- Mozzarella cheese (just a little bit, don’t go crazy)
For the Oil Mix You’ll Need:
- 1 1/2 Tablespoons of Olive Oil
- 1/2 Tablespoon of Minced Onion
- Salt and Pepper to Taste
DIRECTIONS
- Get a medium-sized bowl and mix the tomatoes, onion, basil leaves, olive oil, garlic salt, and salt and pepper.
- After mixing put the bowl in the fridge and let the juices marinate for a few hours.
- When you’re ready to serve, get started on the bread. Get a small flat plate and add olive oil, minced onion and salt, and pepper.
- Cut the french bread into pieces and dip each side onto the flat plate mixture and set aside on a flat oven sheet and let them toast at 350º for a couple of minutes.
- Now, you can make your own balsamic vinaigrette but I buy mine from a local Italian market.
- Once the bread has been toasted, arrange the bread on a serving plate.
- Add the mixture from the fridge and once the mixture is on the bread, add the balsamic vinegar and sprinkle some mozzarella cheese.
